Quinoa Ultra Healthy Stew #1

This is one of my favorite stews I eat often. It is super healthy and quick to prepare. The meal is pacifying to the senses (Satvic in Ayurveda), very antinflamatory, yet also bursts with many flavors, so not boring by any means.

Ingredients: quinoa, avocado, one or more vegetables (my favorites are broccoli, any form of squash, purple cabbage, cauliflower, and pumpkin), cayenne pepper, sauerkraut, apple cider vinegar, extra virgin olive oil or coconut oil.

Take two pots, one for the vegetables and one for the quinoa. Add the desired amount of water to the vegetables (some people like their stews more watery or less watery). Steam for 5 to 10 minutes until vegetables are crispy soft (not overdone).

In a medium to large size bowl, add little sliced pieces of avocado, a fork of sauerkraut, a tablespoon of apple cider vinegar, your desired shakes of cayenne pepper, and a tablespoon of extra virgin olive oil or teaspoon of coconut oil.

When the two pots are ready, add the desired amount of quinoa and steamed vegetables to the prepared bowl and mix it all together.

Optional additions to the mix: lemon or lime, a little salt (I don’t use any salt because the sauerkraut already has salt in it and that is plenty for me), black pepper, sunflower or pumpkin seeds that were just toasted on a pan.

For the quinoa and/or steamed vegetables that one isn’t using, save for the next day and repeat the preparation of the avocado/ACV/sauerkraut bowl.
